You can give the porter anything you want, including the satchel with your passports and boarding pass in it. They don't care.
You might, however. Keep with you everything that you'll need to get on the ship, everything that cannot be checked, and everything that has any huge value or that you'll need for the first few hours before your checked luggage arrives.
What you'll need to get on the ship: proof of citizenship, photo id, and boarding pass.
What cannot be checked: any allowed wine or non-alcoholic drinks.
What has large value: money, credit cards, jewelry ...
What you'll need for the first few hours: medications, bathing suits, paperback novels...
Can I give them a luggage with water
Sure - again, they don't care.
But you won't get the water back.
We plan to bring some water and I don't want to make my wife carrying that around.
That's nice of you to volunteer to carry it for her...
