RED VELVET CUPCAKES — CARNIVAL-STYLE
Cupcake ingredients:
1 lb. all-purpose baking flour
8 oz. salted butter
8 oz. margarine
1 lb. sugar
7 extra-large eggs
1/4 oz. baking powder
1/2 cup canola oil
1/4 oz. vanilla extract
1 1/2 oz. cocoa powder
3 oz. plain yogurt
1 oz. white wine vinegar
Topping ingredients:
6 large egg whites
5 oz. sugar
8 oz. salted butter, softened
2 oz. water

DIRECTIONS
For the cupcakes:
In an electric mixing bowl, mix butter, margarine and sugar until fluffy. Slowly add in eggs with all the dry ingredients, then add the canola oil, plain yogurt, red food coloring, white wine vinegar and vanilla extract. Mix all the ingredients together by hand. Pipe the mixture in muffin cups (use 3 oz. of the mixture per cupcake) and bake in the oven at 350 degrees Fahrenheit for 30-35 minutes. Keep at room temperature.
For the topping:
Whip the egg whites stiff. Boil the sugar and water together until there is a consistency. Add the sugar syrup to the egg whites, little by little, and keep mixing. Slowly add the softened butter to the mixture and keep mixing until the mixture is fluffy and light. Add red color as needed and pipe the cream on the top of the cupcake. Garnish with red sugar.
