The buffet changes every day.  I don't remember which day is Mexican food.

There are 2 formal nights.  We do the Western Carib (MoBay, GC and CZM) and I believe it's Tuesday and Friday.

There IS a mexican buffet one night on the Conquest. At least there was on my cruise in August. That is besides the normal daily buffet changes.   The front buffet line is usually the one that changes, while to one closest to the back area ( near the Serenity) is the usual buffet fare.

There are two formal dinner nights. The first will be on Monday night and the 2nd was on Friday on my cruise anyway. I saw a huge variety of different dress. Everything from guys dressed in full dress suits, to guys dressed in jeans and sport shirts. There was even one guy who, every night, dressed up like a pirate. he had the long beard and looks to pull it off. Twas kinda spooky.

Enjoy your cruise. Conquest is one of Carnival's finest ships for sure.

We did Dunns River Falls in Jamaica and it was good, but sure was a long shuttle bus ride to and from.  We went to Sunset Beach Hotel last year and it was wonderful - all inclusive drinks and food, swim up bar swimming pool, water park area with slides and beach - they even provide towels.  It is also a very short taxi ride to this resort, you can see the Conquest from the resort.  In Grand Cayman, we have just done some shopping.  Have fun on your cruise!
