Give the scallops a quick sear \u2014 making sure not to overcook them \u2014 and then season them.<\/li>\n<\/ol>\n<p><strong>TO MAKE THE RISOTTO:<\/strong><\/p>\n<ol>\n<li>Sautee the onion, chopped shallot, garlic and bay leaf in blended oil. De-glaze the pan with white wine, then reduce the contents of the pan.<\/li>\n<li>Add Arborio rice and saut\u00e9 it for a while. Add a little bit of stock, stirring the rice continuously while adding it.<\/li>\n<li>Cook rice till the texture\u2019s al dente.<\/li>\n<li>Finish the risotto with soft butter, parmesan cheese and chopped parsley.<\/li>\n<\/ol>\n<p><strong>TO GREMOLATE THE GREMOLATA:<\/strong><\/p>\n<ol>\n<li>Just combine all ingredients together. That\u2019s it!<\/li>\n<\/ol>\n<p><strong>TO MAKE THE WHOLE THING LOOK REALLY FANCY:<\/strong><\/p>\n<ol>\n<li>Using a squeeze bottle, drizzle small circles of red wine reduction onto the plate.<\/li>\n<li>Scoop 2 oz of risotto onto the center of the plate.<\/li>\n<li>Place three scallops on top of the risotto.<\/li>\n<li>Drizzle some gremolata onto scallops.<\/li>\n<li>Garnish the dish with a Parmesan crisp and parley sprig.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"We know this great little spot for scallops.
