Chinese New Year is coming up and it\u2019s celebrated around the world. Many Asian countries call the new year celebration \u201cSpring Festival\u201d and food is always involved. The first day of the new year is marked with decorative red lanterns, firecrackers and fireworks, family reunions, and a lot of feasting!<\/span><\/p>\n

There are dumplings, rice balls, and spring rolls, and part of some annual feasts involves \u201clong life noodles\u201d\u2014served for health and prosperity. In celebration of this new year and <\/span>Asian cuisine<\/span><\/a>, here are some of the most popular noodles around the globe and where you can enjoy them!<\/span><\/p>\n

Soba noodles have a nutty and are perfect for dipping.<\/figcaption><\/figure>\n

Soba:<\/b><\/p>\n

These noodles are made from buckwheat flour, so they\u2019re usually brown or beige and have a unique nutty flavor (as a bonus, they pack some protein!).\u00a0 They\u2019re pretty thin\u2014think spaghetti\u2014and can often be found in soup, stir fry, or served cold in a salad.<\/span><\/p>\n

Soba noodles originally came from Japan, where summers are hot, so cold soba with a dipping sauce is enjoyed as a refreshing meal. Soba\u2019s cousin noodle, udon,<\/span> is thicker and made with wheat flour. It\u2019s mostly served hot.<\/span><\/p>\n

Where to get them: <\/span><\/i>Seattle<\/span><\/i><\/a> has a large Japanese community (as well as great fresh fish), so look for soba noodles at a <\/span><\/i>sushi restaurant<\/span><\/i><\/a>.<\/span><\/i><\/p>\n

Egg Noodles:<\/b><\/p>\n

These tasty yellow noodles offer up a rich flavor and chewy texture thanks to\u2014you guessed it\u2014the eggs. They\u2019re incredibly popular and can be found in all sorts of dishes, like Lo Mein meals in Chinese cooking.<\/span><\/p>\n

Egg noodles are the star of the popular Indonesian dish Mee Goreng, where they\u2019re served with a sweet (somewhat sticky) sauce and bean sprouts, green onion, shrimp or chicken, and even more egg cooked and cut into \u201cribbons.\u201d\u00a0\u00a0<\/span><\/p>\n

Where to get them: <\/span><\/i>Indonesia<\/span><\/i><\/a> has excellent Mee Goreng, so try this authentic dish if you\u2019re taking a trip! Otherwise, Chinatowns in<\/span><\/i> New York City<\/span><\/i><\/a> and San Francisco serve up plenty of egg noodle options.<\/span><\/i><\/p>\n

Vermicelli:<\/b><\/p>\n

This rice noodle is super thin and the fine white strands make up many traditional Asian dishes, from fried noodles to breakfast porridge noodles in China.<\/span><\/p>\n

In the U.S., vermicelli is probably best known as a staple of Vietnamese food. It\u2019s in pho, the hot, savory soup served with rare beef, bean sprouts, and sliced jalapenos (a perfect winter warmer). These versatile noodles are also wrapped up in rice paper with shrimp and veggies as the appetizer spring rolls.<\/span><\/p>\n

Where to try them: You\u2019ll find vermicelli in Vietnamese and Thai restaurants across the country, but if you\u2019re taking a trip to <\/span><\/i>Los Angeles<\/span><\/i><\/a>, head to Thai Town\u2014the only recognized one in the U.S.<\/span><\/i><\/p>\n

Glass Noodle:<\/b><\/p>\n

Possibly the best-named noodle out there, these transparent noodles are made from different starches, like sweet potato and mung bean, and really look like glass. You\u2019ll find them in hot pots, a large communal simmering soup served at the center of the table. Glass noodles are also common in Korean cooking, like japchae\u2014a savory glass noodle stir fry that\u2019s a feature for holidays!\u00a0\u00a0\u00a0<\/span><\/p>\n

Where to try them: Chinatown is well known, but there\u2019s also a lively Korea Town in the center of <\/span><\/i>New York City<\/span><\/i><\/a>. And did you know<\/span><\/i> Hawaii<\/span><\/i><\/a> has the highest percentage of Korean ancestry of any state?<\/span><\/i><\/p>\n
