These tacos are a perfectly balanced family meal, with a Mexican twist!<\/p>\n<p class=\"p1\"><em><img loading=\"lazy\" decoding=\"async\" class=\" aligncenter\" src=\"https:\/\/images.newscred.com\/767b344e48020ca9f04bfdeb1ba56f8d\" alt=\"test\" width=\"560\" height=\"840\" \/><\/em><\/p>\n<p class=\"p1\">On my cruise in the <a href=\"http:\/\/www.carnival.com\/cruise-to\/western-caribbean-cruises?cid=So_CM_NA_P_AWG#6_1112&amp;DMP=5019,6120,7036,,8003\" target=\"_blank\" rel=\"noopener\">Western Caribbean<\/a>\u00a0I enjoyed so many regionally inspired flavors. Fresh Mexican food was everywhere. Cooking it up at home brings back memories of the seas!\u00a0In this dish, fall &amp; winter flavors pair perfectly with corn tortillas\u00a0in these\u00a0<strong>Roasted Butternut Squash &amp; Turkey Tacos<\/strong>.<\/p>\n<p class=\"p1\"><img loading=\"lazy\" decoding=\"async\" class=\" aligncenter\" src=\"https:\/\/images.newscred.com\/61d92af911cc56acdb3ea3c5f4d15b89\" alt=\"test\" width=\"560\" height=\"840\" \/><\/p>\n<p class=\"p1\">Use Thanksgiving turkey leftovers, or cook up some boneless turkey breast which is what I did here.<\/p>\n<p class=\"p1\"><img loading=\"lazy\" decoding=\"async\" class=\" aligncenter\" src=\"https:\/\/images.newscred.com\/13c0ca6ff9e30204346db58e24f9586b\" alt=\"test\" width=\"560\" height=\"840\" \/><\/p>\n<p class=\"p1\">For the butternut squash, I cut, seeded, peeled &amp; cut it into bite sized pieces. Then it was tossed with olive oil, sea salt, pure maple syrup, cinnamon, salt &amp; pepper.<\/p>\n<p class=\"p1\">Lay it out on a sheet pan in a single layer &amp; roast at 400 degrees for 30 minutes.<\/p>\n<p class=\"p1\">Your house will smell holiday festive when the squash roasts. This dish is perfect for entertaining &amp; for family meals. For more cruise inspired recipes please follow my\u00a0<a href=\"http:\/\/www.pinterest.com\/marlameridith\/cruise-inspired-recipes\/\" target=\"_blank\" rel=\"noopener\"><span class=\"s1\">Pinterest board<\/span><\/a>.<\/p>\n<p class=\"p1\"><img loading=\"lazy\" decoding=\"async\" class=\" aligncenter\" src=\"https:\/\/images.newscred.com\/bb7a34b13f9b399f0609eb41a0db8863\" alt=\"test\" width=\"560\" height=\"840\" \/><\/p>\n<p class=\"p1\"><strong>Ingredients<\/strong><\/p>\n<p class=\"p1\"><strong>Roasted Butternut Squash<\/strong><\/p>\n<ul class=\"ul1\">\n<li class=\"li2\">1 butternut squash (about 1 pound) ~ peeled, seeded &amp; cubed<\/li>\n<li class=\"li2\">1\/4 cup good olive oil<\/li>\n<li class=\"li2\">1\/4 cup pure maple syrup<\/li>\n<li class=\"li2\">1\/2 teaspoon ground cinnamon<\/li>\n<li class=\"li2\">1\/2 teaspoon fine sea salt<\/li>\n<li class=\"li2\">1\/2 teaspoon ground black pepper<\/li>\n<\/ul>\n<p class=\"p1\"><strong>Turkey<\/strong><\/p>\n<ul class=\"ul1\">\n<li class=\"li2\">1 pound boneless turkey breast or cooked leftover turkey, trimmed into 2 inch pieces<\/li>\n<li class=\"li2\">2 tablespoons olive oil<\/li>\n<li class=\"li2\">1 tablespoon fresh parsley,\u00a0chopped<\/li>\n<li class=\"li2\">2 cloves garlic, minced<\/li>\n<li class=\"li2\">1\/2 teaspoon fine sea salt<\/li>\n<li class=\"li2\">1\/2 teaspoon ground black pepper<\/li>\n<\/ul>\n<p class=\"p1\"><strong>Toppings &amp; Tortillas<\/strong><\/p>\n<ul class=\"ul1\">\n<li class=\"li2\">8 six inch corn tortillas<\/li>\n<li class=\"li2\">3 tablespoons crumbled goat cheese<\/li>\n<li class=\"li2\">3 tablespoons dried cranberries, chopped<\/li>\n<li class=\"li2\">3 tablespoons chopped fresh parsley<\/li>\n<\/ul>\n<p class=\"p1\"><strong>Directions<\/strong><\/p>\n<ol>\n<li class=\"p1\">Preheat the oven to 400 degrees F with the rack in the middle.<\/li>\n<li class=\"p1\">Place squash on a baking tray &amp; add all the ingredients for roasting.<\/li>\n<li class=\"p1\">Toss well until all the pieces are well coated in the oil &amp; seasonings.<\/li>\n<li class=\"p1\">Bake for 30 minutes turning pieces with a pair of tongs once during cooking.<\/li>\n<li class=\"p1\">While the squash is roasting&#8230;\n<ol>\n<li class=\"p1\">If you are using leftover turkey: reheat it in the microwave or oven. Season with some garlic salt, pepper &amp; parsley to taste.<\/li>\n<li class=\"p1\">If using fresh, uncooked turkey breast: Heat oil &amp; garlic over medium high heat for 30 seconds. Add the turkey pieces. Season &amp; cook for about 8 minutes, until it is browned, cooked through &amp; juices run clear.<\/li>\n<\/ol>\n<\/li>\n<li class=\"p1\">Assemble:\u00a0Place tortillas on a serving tray. Add some butternut squash to each. Top with the turkey, goat cheese, cranberries &amp; chopped parsley.
