They are pretty much the best Asian noodles I&#8217;ve ever eaten. I learned about this dish on our\u00a0Carnival Cruise\u00a0<a href=\"https:\/\/www.carnival.com\/cruise-to\/eastern-caribbean-cruises.aspx?cid=icp_dcs_awg_familyfreshcooking\" target=\"_blank\" rel=\"noopener\">Eastern Caribbean<\/a>\u00a0adventure aboard <a href=\"https:\/\/www.carnival.com\/cruise-ships\/carnival-sunshine.aspx?cid=icp_dcs_awg_familyfreshcooking\" target=\"_blank\" rel=\"noopener\">Carnival Sunshine<\/a>. I craved these noodles daily and made frequent visits to the ship&#8217;s restaurant,\u00a0<a href=\"https:\/\/www.carnival.com\/cruise-food\/ji-ji-asian-kitchen-dinner?cid=icp_dcs_awg_familyfreshcooking\" target=\"_blank\" rel=\"noopener\">JiJi Asian Kitchen<\/a>\u00a0to get them. Hakka is a region in China, the dishes there are simple and traditional.\u00a0What sets these Indo-Chinese noodles apart from others I&#8217;ve had (and what makes them irresistible) is that they are tossed with butter at the end of cooking.<\/p>\n<p class=\"p1\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-6174 size-full\" src=\"https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/03\/noodles2.jpg\" alt=\"Ship view looking behind at island\" width=\"456\" height=\"608\" srcset=\"https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/03\/noodles2.jpg 456w, https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/03\/noodles2-225x300.jpg 225w\" sizes=\"(max-width: 456px) 100vw, 456px\" \/><\/p>\n<p class=\"p1\">This recipe\u00a0is as great for family dinners as it is for entertaining larger groups. You can easily double or triple the recipe to suit your needs. A few more we fell in love with were\u00a0the Slow-Braised Pork Belly, Tamarind Shrimp Soup, Singapore Chili Shrimp and the Blistered Beans. Also, don&#8217;t forget to pair your dinner with one of their\u00a0signature cocktails. A true treat!<\/p>\n<p class=\"p1\"><strong>RECIPE<\/strong><\/p>\n<ul class=\"ul1\">\n<li class=\"li1\">8 ounces udon noodles<\/li>\n<li class=\"li1\">1 cup matchstick carrots<\/li>\n<li class=\"li1\">1 bell pepper (any color you prefer)<\/li>\n<li class=\"li1\">1 cup cabbage, sliced small<\/li>\n<li class=\"li1\">1\/2 cup green onion, chopped\u00a0(plus more for topping)<\/li>\n<li class=\"li1\">1 cup shiitake mushrooms, chopped<\/li>\n<li class=\"li1\">3 tablespoons grapeseed or canola oil<\/li>\n<li class=\"li1\">3 tablespoons soy sauce<\/li>\n<li class=\"li1\">1 tablespoon fish sauce<\/li>\n<li class=\"li1\">toasted sesame oil<\/li>\n<li class=\"li1\">2 tablespoons unsalted butter<\/li>\n<li class=\"li1\">1\/4 teaspoon red chili powder<\/li>\n<li class=\"li1\">2 cloves garlic, minced<\/li>\n<\/ul>\n<p class=\"p1\"><strong>DIRECTIONS<\/strong><\/p>\n<p class=\"p1\">Cook\u00a0the noodles to package directions, rinse in cool water, toss with some sesame oil and set aside.<\/p>\n<p class=\"p1\">Heat the oil in a wok or large saut\u00e9 pan over medium heat. Add the carrots and cook for 3-4\u00a0minutes. Add the bell pepper, cook another 3 minutes. Add the cabbage and green onion. Cook for 5 minutes, stirring frequently. Add the soy sauce, fish sauce and mushrooms. Let this\u00a0boil, then reduce heat to low and add the noodles. Toss well with a pair of tongs.<\/p>\n<p class=\"p1\">In a small saut\u00e9 pan, melt the butter and add the garlic and chili powder. Bring to a boil over medium heat.
