One of the many wonderful aspects of cruising is the amazing number of <a href=\"https:\/\/www.carnival.com\/dining?cid=icp_dcs_awg_inspiredbycharm\" target=\"_blank\" rel=\"noopener\">dining options<\/a> onboard for breakfast, lunch, dinner, and everything in between. As delicious as the food is in the formal dining room, for me, the specialty restaurants are where it&#8217;s at. On Carnival Vista, you&#8217;ll find <a href=\"https:\/\/www.carnival.com\/cruise-food\/cucina-del-capitano?cid=icp_dcs_awg_inspiredbycharm\" target=\"_blank\" rel=\"noopener\">Cucina del Capitano<\/a> (Italian),\u00a0<a href=\"https:\/\/www.carnival.com\/~\/media\/Images\/explore\/dining\/menus\/fahrenheit-555-menu.pdf?cid=icp_dcs_awg_inspiredbycharmm\" target=\"_blank\" rel=\"noopener\">Fahrenheit 555<\/a> (Steakhouse), and <a href=\"https:\/\/www.carnival.com\/cruise-food\/ji-ji-asian-kitchen-dinner?cid=icp_dcs_awg_inspiredbycharm\" target=\"_blank\" rel=\"noopener\">JiJi Asian Kitchen<\/a> (Asian). There is an additional fee for dinner at each of these ($15-$35 per person), but it&#8217;s so worth it. On our recent cruise, my mom and I ate at each of the restaurants. We actually hit JiJi Asian Kitchen a second time for the Kung Pao Chicken. It was crazy delicious.<\/p>\n<p>Now, two months after our cruise, I&#8217;m again craving that incredible Kung Pao Chicken. So what&#8217;s a boy to do? I decided to recreate the recipe at home. Since I prefer a little less heat in my food, I opted to leave the dried chilis out. Instead, I put in crushed red pepper flakes. And while I can&#8217;t take you all on a Carnival Cruise (I wish.), I can at least share a taste of the cuisine!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-6721\" src=\"https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/04\/pao10.jpg\" alt=\"Kung Pao Chicken over rice on a white plate and two chopsticks on the side with text overlay\" width=\"456\" height=\"707\" srcset=\"https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/04\/pao10.jpg 456w, https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/04\/pao10-193x300.jpg 193w\" sizes=\"(max-width: 456px) 100vw, 456px\" \/><\/p>\n<p><strong>Kung Pao Chicken<br \/>\n<\/strong><em>Serves 4<\/em><\/p>\n<p>Here&#8217;s what you will need:<\/p>\n<ul>\n<li>1 pound boneless, skinless, chicken breasts, cut into bite-sized pieces<\/li>\n<li>\u00a02 tablespoons peanut oil (or vegetable oil)<\/li>\n<li>\u00a03 cloves of garlic, minced<\/li>\n<li>\u00a01\/2 teaspoon crushed red pepper flakes (Use more for added heat.)<\/li>\n<li>\u00a01\/4 teaspoon ground ginger<\/li>\n<li>\u00a01\/2 medium green bell pepper, roughly chopped<\/li>\n<li>\u00a01 medium red bell pepper, roughly chopped<\/li>\n<li>\u00a01\/3 cup roasted peanuts<\/li>\n<li>\u00a05 green onions, chopped<\/li>\n<li>Cooked white rice for serving<\/li>\n<\/ul>\n<p>Marinade:<\/p>\n<ul>\n<li>2 tablespoons soy sauce<\/li>\n<li>\u00a01 tablespoon balsamic vingar<\/li>\n<li>\u00a02 teaspoons sesame oil<\/li>\n<li>\u00a02 teaspoons cornstarch<\/li>\n<\/ul>\n<p>Sauce:<\/p>\n<ul>\n<li>2 tablespoons soy sauce<\/li>\n<li>\u00a01 tablespoon dark soy sauce<\/li>\n<li>\u00a02 tablespoons hoisin sauce<\/li>\n<li>\u00a02 teaspoons balsamic vinegar<\/li>\n<li>\u00a02 teaspoons sesame oil<\/li>\n<li>\u00a01 tablespoon sugar<\/li>\n<li>\u00a03 teaspoons cornstarch<\/li>\n<\/ul>\n<p>In a medium-sized bowl, prepare the marinade by whisking together soy sauce, balsamic vinegar, sesame oil, and cornstarch. Add the chicken and stir to coat. Let stand at room temperature for about 15 minutes.<\/p>\n<p>In another bowl, prepare the sauce by whisking together the soy sauce, dark soy sauce, hoisin sauce, balsamic vinegar, sesame oil, sugar, and cornstarch. Set aside.<\/p>\n<p>In a wok (or large skillet) over medium heat, add the peanut oil. Stir in the crushed red pepper flakes. Add the red and green bell peppers. Cook for 3-4 minutes or until the peppers are slightly softened. Stir in the minced garlic and ginger. Cook for an additional minute. Add the chicken with a slotted spoon (no need to include extra marinade). Cook the chicken for 4-5 minutes or until it&#8217;s thoroughly cooked.<\/p>\n<p>Add the sauce to the chicken and mix it to coat the chicken. Stir in the peanuts and cook for an additional 1-2 minutes. Remove from heat and toss in half of the chopped green onions. Transfer to a serving plate; sprinkle the top with the remaining green onions. This is it!<\/p>\n<p>While baking and making appetizers have been my forte, I can certainly see myself getting more into actual cooking.
