Back when we sailed on the <a href=\"https:\/\/www.carnival.com\/cruise-ships\/carnival-breeze.aspx?cid=icp_dcs_awg_Reema\" target=\"_blank\" rel=\"noopener\">Carnival Breeze<\/a> last year, we ate tons of amazing seafood and all the shrimp we possibly could, but the coconut shrimp at RedFrog Pub was a favorite. When we returned back from our trip, I figured it was time that I learned to make the dish at home.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7969\" src=\"https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/07\/shrimp1.jpg\" alt=\"Overhead photo of coconut shrimp and ingredients on a kitchen counter \" width=\"616\" height=\"410\" srcset=\"https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/07\/shrimp1.jpg 616w, https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/07\/shrimp1-300x200.jpg 300w\" sizes=\"(max-width: 616px) 100vw, 616px\" \/><\/p>\n<\/div>\n<\/div>\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>Though it\u2019s one of my favorite ways to prepare and eat shrimp, coconut shrimp can be a bit unhealthy in its traditional fried form. Here, I\u2019ve opted to bake the shrimp instead. You get the same great crunch and coconut flavor, but it\u2019s a lot healthier and in my opinion, a lot easier to cook as well!<\/p>\n<p>I\u2019ve found that this is a great dish to serve as an appetizer while entertaining. It ends up looking a lot more impressive and difficult than it actually is (preparing it really could not be easier), and it\u2019s been a crowd pleaser every time I\u2019ve made it for guests. I like to prep it with two different sauces: a tangier one and a creamier one, but you could experiment with other flavors and sauces to your liking. It\u2019s a really versatile dish so the options are pretty limitless!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7971\" src=\"https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/07\/shrimp2.jpg\" alt=\"Coconut shrimp on kitchen counter with dipping sauces and limes\" width=\"456\" height=\"684\" srcset=\"https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/07\/shrimp2.jpg 456w, https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/07\/shrimp2-200x300.jpg 200w\" sizes=\"(max-width: 456px) 100vw, 456px\" \/><\/p>\n<div class=\"page\" title=\"Page 3\">\n<div class=\"section\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p><strong>Baked Coconut Shrimp Recipe: <\/strong><\/p>\n<p><strong>Ingredients (for shrimp):<\/strong><\/p>\n<ul>\n<li>1 lb large raw shrimp, peeled and deveined<\/li>\n<li>1\/2 cup shredded sweetened coconut flakes<\/li>\n<li>1\/2 cup panko bread crumbs<\/li>\n<li>1\u20442 tsp powdered ginger<\/li>\n<li>1\u20442 tsp garlic powder<\/li>\n<li>1\u20442 tsp cayenne pepper<\/li>\n<li>1 large egg<\/li>\n<li>1 tsp salt (or to taste)<\/li>\n<li>1 tbsp all purpose flour<\/li>\n<li>Olive oil<\/li>\n<\/ul>\n<p><strong>Ingredients (for tangy dipping sauce):<\/strong><\/p>\n<ul>\n<li>1 tbsp rice wine vinegar<\/li>\n<li>2 tbsp marmalade (we used guava jelly but orange or lemon marmalade would work nicely too)<\/li>\n<li>1\u20442 tsp crushed red pepper flakes<\/li>\n<\/ul>\n<p><strong>Ingredients (for creamy Sriracha mayo sauce):<\/strong><\/p>\n<ul>\n<li>1\u20444 cup mayonnaise<\/li>\n<li>1 tbsp Sriracha (you could add more if you want the sauce to be spicier)<\/li>\n<li>Juice from 1\u20444 lime<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-7972\" src=\"https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/07\/shrimp3.jpg\" alt=\" Overhead photo of coconut shrimp ingredients displayed on a kitchen counter\" width=\"616\" height=\"410\" srcset=\"https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/07\/shrimp3.jpg 616w, https:\/\/www.carnival.com\/awaywego\/wp-content\/uploads\/2017\/07\/shrimp3-300x200.jpg 300w\" sizes=\"(max-width: 616px) 100vw, 616px\" \/><\/p>\n<div class=\"page\" title=\"Page 4\">\n<div class=\"section\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p><strong>Directions for shrimp: <\/strong><\/p>\n<p>1. Preheat the oven to 425 degrees.<br \/>\n2. Rinse and devein the shrimp, and lightly salt after deveining. You can remove the tails at this point if you prefer.<br \/>\n3. Combine coconut flakes, panko bread crumbs, powdered ginger, garlic powder, cayenne\u00a0pepper and remaining salt in a bowl.<br \/>\n4. Whisk egg into the second bowl.<br \/>\n5. Place flour into separate bowl.<br \/>\n6. Spray or spread olive oil onto a baking pan. Start the battering process by dipping the shrimp into the flour to coat it evenly. Then, drop the floured shrimp into the egg; dip one last time into the panko and coconut flake mixture. Once all of your shrimp are breaded, place them into the oven, and bake for about 8-10 minutes, or until the tops start to turn golden brown.<\/p>\n<p>9. Turn the shrimp over after they\u2019ve cooked 8-10 minutes. Place them back into the oven for 6-8 minutes or until browned and cooked thoroughly.<\/p>\n<p>10.
